Strawberry Lemonade Cookie Recipe
April 15, 2022
Do you like strawberries or strawberry-flavored things? Do you like lemonade? Then I have the perfect cookie recipe for you!!
This recipe has a twenty-five-minute prep time, a total time of forty minutes, and will serve around 40 people, depending on how big you make the cookies.
Ingredients
- One box of Betty Crocker Super Moist Lemon Cake Mix
- One box of Betty Crocker Super Moist Strawberry Cake Mix
- Four eggs
- ⅔ cup of vegetable oil (divided, this means that it won’t all be used at once)
- Two teaspoons of lemon juice
- Two cups of powdered sugar (divided)
- One cup of milk (for the optional glaze)
Baking Steps
- Preheat your oven to 375 degrees F.
- Time to start making the cake mix! In a large bowl, add the lemon cake mix, two eggs, ⅓ cup of vegetable oil, one teaspoon of lemon juice, and mix until well blended and smooth. In another large bowl, add the strawberry cake mix and follow the same instructions that you used for the lemon cake mix. DO NOT USE THE DIRECTIONS ON THE CAKE MIX BOX
- Once you’re done making the cake mixes, cover each bowl and let it refrigerate for twenty minutes.
- After the mixes have been refrigerated, remove them from the fridge. Take two teaspoons of the lemon cake mix and roll it into a ball shape. Repeat with the strawberry cake mix. After you’ve taken two teaspoons from each, roll the balls of strawberry and lemon cake mix into one big ball.
- You’ll want to get a smaller bowl and add one cup of powdered sugar. Take the dough ball and roll it lightly around in the bowl until it has an even coat.
- Repeat steps four and five for the remainder of the cookie dough.
- Grab a baking sheet and cover it in parchment paper(so the cookies don’t stick). Place the dough balls around two inches apart.
- Bake the cookies for 10 minutes, or until they turn a slight golden brown and are cooked all the way through. Transfer them onto a wire rack, let cool completely, and enjoy!
Glaze Instructions
- To make the glaze, you’ll need to whisk together one cup of powdered sugar and one to two tablespoons of milk until combined. If the glaze needs to be thinned, add more milk as needed.
- Once you’re done making the glaze, let the glaze rest until it reaches room temperature. Add the glaze into a piping bag or drizzle it on the cookies with a fork, and enjoy!!!
